Recipe: Corn Islands rice and beans with coconut milk
Rice and beans is one of the most characteristic cuisines of the Caribbean, especially for its star ingredient: coconut milk. This is one of the most cooked meals on the Corn Islands, and it is usually accompanied by chicken, fish or rundown.
Ingredients (for 10 people)
2 cups of boiled red kidney beans
3 cups of soaked uncooked rice
2 cups of coconut milk
4 pieces of chop onions
1 chinense pepper (capsicum chinense)
A pinch of sugar (optional)
Black pepper and salt (to your preference)
1 teaspoon of coconut or vegetable oil
Preparation
Add the teaspoon of oil to the pot, then start the fire. After the oil gets hot, add the pieces of onions, when the onions start frying, add the beans, coconut milk and condiments. When the beans start to boil, add the rice and sugar to your preference.
Stir for a while and cook over moderate heat, and let it cook until it dries. Cover and lower the heat. Stir, cover, and remove from heat.
