Recipe: Corn Islands Johnnycake
Johnnycake or Journey Cake is a traditional bakery of the Corn Islands. It is made in Jamaica, the West Indies, the Caribbean shores of South America, and also on the Atlantic coast of the United States. Curiously, in the United States and West Indies, Johnnycake is made out of cornmeal and not coconut. On the Corn Islands, this type of bread is a must at Setups, where locals company families at night until the day of the funeral of their dead relative.
Ingredients:
Two pounds of flour
Two oz. of lard or oil
Half a teaspoon of salt
Two or three teaspoons of baking powder
Tree teaspoon of sugar
A coconut
Preparation
Mix dry ingredients such as flour, salt, sugar, and baking powder. Grater the coconut. Add grated coconut to dry ingredients. Add oil and mix well. If your dough is not soft enough to knead add a little water. Knead for a minute, make small rolls and put to bake in the oven until it looks light brown. When finished, you can eat it with butter.
