Recipe: Corn Islands Ginger beer

Ginger beer is one of the Corn Islands' traditional drinks, generally consume on Christmas and New Year holidays. You will always receive a piece of cake around this time accompanied by ginger beer.

Ingredients


1⁄2 pound of previously grated ginger
1 pound of sugar
12 cloves
12 allspices
1⁄2 lime
1⁄2 teaspoon baking powder
Coloring to your preference

Preparation


The ginger must be crushed and washed and then boiled in two gallons of water for 10 to 15 minutes. Then it is put to boil with a vine known as chustick or chastik, afterward, you must add 3 spoonfuls of coloring, lime juice, cinnamon, allspice, cloves, and sugar to your preference and baking powder if you wish.
