Summary 

The intercultural book "traditional culinary art: identity and heritage of the cultures of the Caribbean coast of Nicaragua" shows how the art of preparing food in Afro-descendant communities and indigenous peoples is closely related to their history, language, ethnography, oral tradition, the environment, production cycles and worldview. The Caribbean or coast foods and beverages are documented as cultural heritage because they were selected by the communities as an expression of their identities.
